In a large mixing bowl, whisk together 2 tablespoons of the avocado oil, the lime juice, cumin, chili powder, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne until combined. Add the chicken strips and toss to coat evenly. Cover and marinate at room temperature for 30 minutes, or refrigerate for up to 4 hours.
Heat a large (12-inch) cast iron skillet or heavy skillet over high heat until very hot, about 2 minutes. Add the remaining 1 tablespoon avocado oil and swirl to coat. Add the bell peppers and onion in a single layer and cook, stirring only once or twice, until the edges are charred and the vegetables are just tender, 5–6 minutes. Transfer the vegetables to a bowl and set aside.
