Cozy, hearty, and deeply satisfying, this casserole is the kind of one-pan dinner that makes grain-free eating feel like anything but a compromise. Juicy chicken thighs are seared until golden, then nestled into a creamy coconut milk sauce loaded with carrots, celery, onion, and garlic — all baked together with cauliflower rice until everything is tender and bubbling. Thyme, rosemary, and smoked paprika give the whole dish a warmly aromatic backbone, while coconut aminos add a subtle savory depth without any soy. Arrowroot starch does the quiet work of thickening the sauce to a silky, spoonable consistency — no flour, no cornstarch, no shortcuts that would knock this out of grain-free territory. The cauliflower rice soaks up every drop of that sauce as it bakes, so you get something that eats like a classic comfort casserole but is built entirely from whole, unprocessed ingredients. It serves four, reheats beautifully, and a handful of fresh parsley on top makes it look like you really had your act together. This is the recipe to bookmark when you need a weeknight win that doesn't feel like you're eating around anything.

Preheat the oven to 375°F (190°C). To rice the cauliflower, cut it into florets and pulse in a food processor in batches until broken down into rice-sized pieces, or grate on the large holes of a box grater. Set aside.
Season the chicken pieces with 1/2 tsp of the salt and 1/4 tsp of the black pepper. Heat 1 tbsp of the avocado oil in a large oven-safe skillet or a large skillet over medium-high heat until shimmering. Add the chicken in a single layer and sear, undisturbed, for 3–4 minutes until the underside is golden and releases easily, then stir and cook 2 minutes more until lightly browned on all sides. Transfer the chicken to a plate and set aside — it will finish cooking in the oven.
