Steamed cauliflower florets get blitzed with creamy coconut milk and olive oil until silky smooth, giving you all the comfort of classic mashed potatoes with none of the heaviness. A quick balsamic reduction infused with fresh thyme gets drizzled over the top, adding a tangy, aromatic contrast that makes this simple side feel restaurant-worthy. The texture comes out impossibly velvety thanks to a food processor doing all the heavy lifting, and a short rest after draining keeps things from turning watery. Finished with a few sprigs of fresh thyme, it's an elegant, low-effort side that fits beautifully into a plant-based spread. This one's a genuinely great pick for a vegan table, whether you're serving it alongside roasted vegetables or piling it high on its own.

Fill a large pot with 1 inch of water and bring to a boil over high heat. Add the cauliflower florets, cover, and steam until completely tender and easily pierced with a fork, about 12–15 minutes.
While the cauliflower steams, combine the balsamic vinegar and 1 tsp olive oil in a small saucepan over medium heat. Cook, stirring occasionally, until the vinegar reduces by about half and coats the back of a spoon, 4–5 minutes. Remove from heat and stir in the thyme leaves. Set aside.
