Steamed cauliflower gets blitzed into a silky, creamy mash with coconut milk and olive oil, whipped until it's completely smooth and lush without a trace of graininess. The real star is the balsamic-thyme reduction: vinegar simmered down until it's syrupy and glossy, then finished with fresh thyme leaves for an herby, slightly sweet edge that cuts through the richness of the mash below. It's an elegant, low-effort side that still feels special enough for a holiday table or a Sunday roast dinner. Fresh thyme sprigs on top add a fragrant, restaurant-style finish that takes almost no extra effort. This one is a genuinely solid pick for a dairy free spread, delivering all the comfort of a classic mashed side without missing a beat.

Fill a large pot with 1 inch of water and bring to a boil over high heat. Add the cauliflower florets, cover, and steam until completely tender and easily pierced with a fork, about 12–15 minutes.
While the cauliflower steams, combine the balsamic vinegar and 1 tsp olive oil in a small saucepan over medium heat. Cook, stirring occasionally, until the vinegar reduces by about half and coats the back of a spoon, 4–5 minutes. Remove from heat and stir in the thyme leaves. Set aside.
