Smoky cumin, paprika, and oregano come together in a bold spice rub that infuses every bite with warmth, while roasted red peppers and fresh scallion greens add color, brightness, and a little crunch to the filling. Everything gets tucked into soft tortillas, then pan-crisped in garlic-infused oil until the edges turn deep golden and irresistibly crackly. A squeeze of fresh lime at the end wakes up all those smoky, savory flavors and ties the whole thing together. Sliced into wedges, these come together fast enough for a weeknight but taste like something worth slowing down for. This one’s an easy, satisfying pick to add to your vegan dinner rotation, no fuss required.

Pat the chicken breasts dry with paper towels. In a small bowl, combine the cumin, smoked paprika, dried oregano, salt, and black pepper. Rub the spice mixture evenly over both sides of each breast.
Heat 1 tbsp garlic-infused oil in a large skillet over medium-high heat until shimmering. Add the chicken breasts and cook undisturbed for 5–6 minutes, until the underside is golden and releases easily from the pan. Flip and cook for another 5–6 minutes, until the chicken reaches 165°F (74°C) on an instant-read thermometer at the thickest part. Transfer to a cutting board and let rest for 5 minutes, then slice or shred into thin strips.
