Quesadillas are one of those weeknight wins that feel indulgent but come together in under 30 minutes, and this version delivers all the crispy, cheesy satisfaction you'd expect. The trick to keeping it gut-friendly is in a few smart swaps that don't sacrifice any flavor — garlic-infused oil brings that savory depth without the fructans that come from using whole garlic, and only the green tops of scallions are used to keep things on the safe side. Gluten-free tortillas stand in seamlessly for the standard flour variety, crisping up beautifully in the pan so you still get that golden, crackling exterior. Smoked paprika and cumin give the chicken a bold, smoky rub that makes every bite taste like it came from a proper taqueria. Roasted red peppers add a touch of sweetness and color, while two full cups of melted cheddar hold everything together in the most satisfying way. Serve with lactose-free sour cream and a squeeze of fresh lime and you've got a complete meal that makes four servings without any stress. This is the kind of recipe that proves eating around digestive triggers doesn't mean eating boring food.

The green parts of scallions are low in FODMAPs. Avoid the white bulb which is higher in FODMAPs.

Pat the chicken breasts dry with paper towels. In a small bowl, combine the cumin, smoked paprika, dried oregano, salt, and black pepper. Rub the spice mixture evenly over both sides of each breast.
Heat 1 tbsp garlic-infused oil in a large skillet over medium-high heat until shimmering. Add the chicken breasts and cook undisturbed for 5–6 minutes, until the underside is golden and releases easily from the pan. Flip and cook for another 5–6 minutes, until the chicken reaches 165°F (74°C) on an instant-read thermometer at the thickest part. Transfer to a cutting board and let rest for 5 minutes, then slice or shred into thin strips.
