In a mixing bowl, stir together the yogurt, 2 tbsp maple syrup, orange zest, fresh ginger, and cinnamon until evenly combined and the mixture is smooth and fragrant.
In a small bowl, toss the gluten free rolled oats with 1 tbsp maple syrup, melted coconut oil, ground ginger, and a pinch of salt until the oats are evenly coated. Spread the mixture on a plate or small sheet of parchment and press lightly into a thin layer; it will crisp as it sits at room temperature for 5–10 minutes, or you can refrigerate it briefly to firm up faster.
