In a small bowl, whisk together the orange juice, orange zest, tamari, maple syrup, fresh ginger, rice vinegar, cornstarch, and sesame oil (and red pepper flakes, if using) until the cornstarch is fully dissolved with no lumps.
Pour the mixture into a small saucepan and set over medium heat. Cook, stirring constantly, until the glaze thickens enough to coat the back of a spoon and a finger drawn through leaves a clear line, about 3–4 minutes. Remove from heat immediately.
