Bright citrus, warming ginger, and a sticky maple glaze come together in a snack that feels way more special than anything you'd grab off a store shelf. The popcorn is popped fresh in coconut oil, then coated in a glossy, candy-like glaze built from maple syrup, butter, fresh orange zest, and orange juice — so every kernel carries real, vibrant flavor. A touch of baking soda makes the glaze foam and turn beautifully lacquered in the oven, giving you that satisfying crunch without any nuts in sight. If you want a little heat, a pinch of cayenne rounds out the sweet-citrus combo in the best possible way. Many flavored popcorn blends at the store sneak in nut-based oils or are made on shared equipment, so making your own batch at home is genuinely the smarter move. The oven-baking step is what takes this from sticky mess to crisp, cluster-worthy perfection — just give it the full cooling time and it sets up beautifully. It's the kind of snack you make for a movie night and somehow finish before the opening credits are done.

Preheat the oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
Pop the popcorn kernels: heat the coconut oil in a large pot over medium-high heat. Add 2–3 test kernels, cover, and wait until they pop. Add the remaining kernels in a single layer, cover, and shake the pot gently every 30 seconds until the popping slows to 2–3 seconds between pops. Transfer the popped corn to a large mixing bowl, discarding any unpopped kernels. You should have about 9–10 cups of popped corn.
