Popcorn gets a serious glow-up here, coated in a glossy maple glaze spiked with fresh orange zest, bright orange juice, and warming ground ginger. The result is sweet, citrusy, and just a little spicy if you go for the cayenne — the kind of snack that disappears faster than you expect. Rye shows up in more places than people realize, from flavored seasonings to certain candy coatings, so making a glazed treat from scratch like this is genuinely the safest move. Every single ingredient here is naturally free of rye, and you're in full control of what goes into that glaze. The baking soda trick gives the coating a light, almost caramel-corn crackle, while the oven bake sets everything into a satisfying crisp shell. It's a little fancy, totally snackable, and works just as well for a movie night as it does for gifting in a pretty bag.

Preheat the oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
Pop the popcorn kernels: heat the coconut oil in a large pot over medium-high heat. Add 2–3 test kernels, cover, and wait until they pop. Add the remaining kernels in a single layer, cover, and shake the pot gently every 30 seconds until the popping slows to 2–3 seconds between pops. Transfer the popped corn to a large mixing bowl, discarding any unpopped kernels. You should have about 9–10 cups of popped corn.
