Sweet, citrusy, and just a little spicy, this glazed popcorn is the kind of snack that disappears faster than you expect. Coconut oil pops the kernels to fluffy perfection, and then a glossy maple syrup glaze loaded with fresh orange zest, orange juice, and warm ground ginger takes things somewhere genuinely special. A pinch of baking soda makes the coating light and lacquer-crisp as it bakes, so every cluster has that satisfying crunch you want from a candied popcorn. The optional cayenne adds a slow, pleasant heat that plays beautifully against the bright citrus — leave it in if you like a little kick. Everything in this recipe is naturally free of pork and pork-derived ingredients, so there's no need to scrutinize labels or swap anything out. It's a crowd-pleasing treat that works just as well for a movie night bowl as it does bagged up as a homemade gift.

Preheat the oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
Pop the popcorn kernels: heat the coconut oil in a large pot over medium-high heat. Add 2–3 test kernels, cover, and wait until they pop. Add the remaining kernels in a single layer, cover, and shake the pot gently every 30 seconds until the popping slows to 2–3 seconds between pops. Transfer the popped corn to a large mixing bowl, discarding any unpopped kernels. You should have about 9–10 cups of popped corn.
