Bright citrus, warming ginger, and a sticky maple glaze come together in a snack that feels way more special than anything you'd grab off a store shelf. The whole thing starts on the stovetop with coconut oil-popped kernels, then gets coated in a glossy sauce built from fresh orange zest, orange juice, maple syrup, and butter — cooked to exactly the right temperature so it clings to every single piece. A quick stir of baking soda into the hot glaze creates just enough lift to keep the coating light and lacquered rather than dense and chewy. A low-and-slow oven bake sets everything beautifully, and the popcorn crisps up even more as it cools on the pan. If you want a little heat, the optional cayenne plays off the citrus and ginger in the best possible way. Many flavored popcorn blends at the store sneak in nut-based ingredients or are made on shared equipment, so making this at home gives you full control over what goes in the bowl. It's the kind of snack that disappears fast — sweet, spicy, tangy, and completely addictive.

Preheat the oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
Pop the popcorn kernels: heat the coconut oil in a large pot over medium-high heat. Add 2–3 test kernels, cover, and wait until they pop. Add the remaining kernels in a single layer, cover, and shake the pot gently every 30 seconds until the popping slows to 2–3 seconds between pops. Transfer the popped corn to a large mixing bowl, discarding any unpopped kernels. You should have about 9–10 cups of popped corn.
