Bright citrus, warming ginger, and a sticky maple glaze come together in a snack that feels genuinely special without requiring much effort. The popcorn is popped fresh in coconut oil, then coated in a glossy, candy-style glaze built from maple syrup, butter, fresh orange zest, and orange juice — flavors that are bold, a little exotic, and completely addictive. A touch of baking soda makes the glaze foam and aerate, giving the finished coating that satisfying crunch you'd expect from a gourmet popcorn shop. The optional cayenne adds a subtle heat that plays beautifully against the sweet citrus, but it's just as good without it. Every ingredient here is straightforward and naturally free from peanuts, so you can skip the label-reading anxiety that comes with store-bought flavored popcorns, which often share equipment or include nut-based oils. After a short bake and a quick cool on the pan, the clusters crisp up into something you'll have a hard time not eating straight off the sheet. It's a crowd-pleasing snack, a fun homemade gift, or just a very good reason to have popcorn for dinner.

Preheat the oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
Pop the popcorn kernels: heat the coconut oil in a large pot over medium-high heat. Add 2–3 test kernels, cover, and wait until they pop. Add the remaining kernels in a single layer, cover, and shake the pot gently every 30 seconds until the popping slows to 2–3 seconds between pops. Transfer the popped corn to a large mixing bowl, discarding any unpopped kernels. You should have about 9–10 cups of popped corn.
