Snacking doesn't have to mean reaching for something processed and regret-inducing, and this citrusy, gingery popcorn is proof. The base is simple — kernels popped in coconut oil — and the glaze leans on maple syrup, fresh orange zest, orange juice, and ground ginger, all ingredients that are genuinely kind to a sensitive digestive system. Ginger in particular has a long reputation for soothing the gut, and using it here means every handful comes with a little functional bonus alongside serious flavor. The baking step is what makes this recipe special: spreading the glazed popcorn on a sheet pan and letting it slowly dry out in the oven gives you a crisp, caramel-like coating without any of the mystery additives you'd find in a store-bought flavored popcorn bag. A pinch of cayenne is optional, so you can dial the heat up or down depending on how your stomach is feeling that day. Once it cools and you break apart those golden clusters, it's genuinely hard to stop eating — which, for a gut-friendly snack, feels like a very good problem to have.

Preheat the oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
Pop the popcorn kernels: heat the coconut oil in a large pot over medium-high heat. Add 2–3 test kernels, cover, and wait until they pop. Add the remaining kernels in a single layer, cover, and shake the pot gently every 30 seconds until the popping slows to 2–3 seconds between pops. Transfer the popped corn to a large mixing bowl, discarding any unpopped kernels. You should have about 9–10 cups of popped corn.
