Snack time just got a serious upgrade with this citrusy, warmly spiced popcorn that's as fun to make as it is to eat. So many flavored popcorns and caramel corn products on store shelves rely on emulsifiers to achieve that glossy, even coating — but this recipe gets there with nothing but real butter, maple syrup, fresh orange zest, and a splash of juice. The glaze is cooked to 250°F so it sets into a proper candy shell, and a pinch of baking soda at the end creates just enough foam to help it coat every kernel beautifully. Ground ginger and a hit of cayenne (if you're feeling bold) give the sweetness a little edge that keeps you reaching back into the bowl. Baking the coated corn low and slow in the oven locks in that satisfying crunch without any additives doing the heavy lifting. Once it cools on the pan, it breaks into gorgeous clusters that are perfect for snacking, gifting, or honestly just eating straight off the baking sheet.

Preheat the oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
Pop the popcorn kernels: heat the coconut oil in a large pot over medium-high heat. Add 2–3 test kernels, cover, and wait until they pop. Add the remaining kernels in a single layer, cover, and shake the pot gently every 30 seconds until the popping slows to 2–3 seconds between pops. Transfer the popped corn to a large mixing bowl, discarding any unpopped kernels. You should have about 9–10 cups of popped corn.
