Bright citrus, warming ginger, and a hint of heat come together in a caramel-style glaze that turns a humble bowl of popcorn into something genuinely special. The glaze is built from maple syrup, butter, fresh orange zest, and orange juice, cooked to just the right temperature so it sets into a crisp, lacquered coating in the oven. A pinch of baking soda gives the whole thing a light, airy crunch, and the optional cayenne adds a slow-building kick that keeps you reaching back into the bowl. Because the glaze relies on butter and maple syrup rather than any egg-based binding, there's nothing to worry about on that front — it works beautifully without them. Popping the kernels in coconut oil first adds a subtle richness that plays perfectly against the tangy orange and spicy ginger. The baking step is what really sets this apart from stovetop caramel corn — spreading it on a sheet pan and letting it dry out in a low oven means every single kernel gets that satisfying, shatteringly crisp finish. Let it cool completely and break apart the clusters for a snack that's equally at home at a movie night or a holiday gift tin.

Preheat the oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
Pop the popcorn kernels: heat the coconut oil in a large pot over medium-high heat. Add 2–3 test kernels, cover, and wait until they pop. Add the remaining kernels in a single layer, cover, and shake the pot gently every 30 seconds until the popping slows to 2–3 seconds between pops. Transfer the popped corn to a large mixing bowl, discarding any unpopped kernels. You should have about 9–10 cups of popped corn.
