Bright citrus and warming spice make this glazed popcorn one of those snacks that's genuinely hard to stop eating. Every kernel gets coated in a glossy maple syrup glaze built from real ingredients — fresh orange zest, fresh orange juice, ground ginger, and a pinch of cayenne if you like a little heat — so the flavor is vivid and clean without a drop of anything artificial. Store-bought flavored popcorn is one of those products where synthetic flavoring agents tend to sneak in under vague labeling, but here you know exactly what's going into the bowl. The baking soda trick is what makes the glaze so satisfying — it creates a light, lacquered crunch that sets beautifully in the oven and crisps up even more as it cools. Coconut oil handles the popping, unsalted butter rounds out the glaze, and the whole thing bakes low and slow until every piece is dry, crackly, and deeply flavored. Break apart the clusters, let it cool, and try not to eat it all before it hits the serving bowl.

Preheat the oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
Pop the popcorn kernels: heat the coconut oil in a large pot over medium-high heat. Add 2–3 test kernels, cover, and wait until they pop. Add the remaining kernels in a single layer, cover, and shake the pot gently every 30 seconds until the popping slows to 2–3 seconds between pops. Transfer the popped corn to a large mixing bowl, discarding any unpopped kernels. You should have about 9–10 cups of popped corn.
