Tangy, bright, and alive with flavor, this fermented cabbage is a far cry from the plain stuff you'd find in a can. Massaging the salt into the shredded cabbage coaxes out a natural brine that does all the heavy lifting โ no vinegar shortcuts, no preservatives, just real lacto-fermentation at work. The orange zest and fresh ginger bring a citrusy warmth, while turmeric gives the finished kraut a gorgeous golden hue and a subtle earthiness that makes it feel genuinely special. Sliced garlic weaves through every forkful, mellowing as it ferments into something almost sweet and deeply savory at the same time. It's completely plant-based and built from whole ingredients you can see and name, so there's zero guesswork about what's in the jar. The process takes a few days of patience, but the hands-on time is minimal โ a daily press to keep the cabbage submerged and you're mostly just waiting for the bubbles to do their thing. Pile it on grain bowls, tuck it into wraps, or eat it straight from the jar; once you taste a batch this vibrant, the store-bought version just won't cut it anymore.

Quarter the cabbage through the core, then cut out and discard the core. Slice each quarter crosswise into thin shreds about 1/8-inch thick. Reserve one of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8โ10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet โ the brine should pool visibly at the bottom of the bowl.
