Tangy, golden, and alive with bright citrus and warm spice, this fermented cabbage is a far cry from the plain, vinegary stuff you find in a can. A simple massage of sea salt draws out the cabbage's natural juices to create the brine, so the whole process relies on nothing more than fresh produce and time โ no specialty products, no hidden additives, and absolutely nothing to second-guess on a label. The orange zest lifts the whole jar with a subtle sweetness, while garlic, ginger, and turmeric layer in savory depth and that gorgeous yellow hue. Watching the bubbles form over a few days is genuinely satisfying, and the payoff is a probiotic-rich condiment that tastes like you really know what you're doing in the kitchen. Pile it onto grain bowls, tuck it into sandwiches, or eat it straight from the jar โ it holds up beautifully in the fridge and keeps getting better as the flavors mellow and deepen.

Quarter the cabbage through the core, then cut out and discard the core. Slice each quarter crosswise into thin shreds about 1/8-inch thick. Reserve one of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8โ10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet โ the brine should pool visibly at the bottom of the bowl.
