Tangy, golden, and alive with bright citrus and warm spice, this fermented cabbage is anything but ordinary. The orange zest and fresh ginger lift the whole jar with a fragrant, almost floral edge, while turmeric gives it that gorgeous yellow hue and a subtle earthiness that pairs beautifully with the sour punch of fermentation. Every ingredient here is straightforward and whole โ just cabbage, salt, garlic, and a few aromatics โ so there's zero guesswork about what's actually in your jar. The process is hands-on in the best way: you massage the cabbage until it weeps its own brine, pack it tight, and let time and beneficial bacteria do the rest. Watching those tiny bubbles form on day two is genuinely satisfying, a little science experiment that ends with something delicious. It's a wonderful condiment alongside grilled meats, grain bowls, or eggs, and the flavor keeps deepening the longer it sits in the fridge.

Quarter the cabbage through the core, then cut out and discard the core. Slice each quarter crosswise into thin shreds about 1/8-inch thick. Reserve one of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8โ10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet โ the brine should pool visibly at the bottom of the bowl.
