Tangy, golden, and alive with bright citrus and warm spice, this fermented cabbage is a far cry from the plain jarred stuff sitting on grocery store shelves. A simple massage of sea salt draws out the cabbage's natural juices to create the brine, meaning no vinegar shortcuts โ just real, slow fermentation doing its thing over three to five days. Sliced garlic, fresh orange zest, grated ginger, and ground turmeric layer in a flavor that's complex and a little unexpected, turning an everyday condiment into something genuinely craveable. The turmeric tints the whole jar a gorgeous deep yellow that looks as good on the counter as it tastes on a plate. Because every ingredient here is whole and plant-based, there's zero guesswork about hidden additives or cross-contact with tree nuts โ just cabbage, salt, and a handful of aromatics you can see and smell. It pairs beautifully alongside grilled proteins, grain bowls, or even just tucked into a sandwich for a probiotic punch. Once you taste a batch you made yourself, it's hard to go back to anything store-bought.

Quarter the cabbage through the core, then cut out and discard the core. Slice each quarter crosswise into thin shreds about 1/8-inch thick. Reserve one of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8โ10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet โ the brine should pool visibly at the bottom of the bowl.
