Tangy, bright, and packed with gut-friendly probiotics, this fermented cabbage is a serious upgrade from anything you'd find in a store-bought jar. The combination of orange zest, sliced garlic, fresh ginger, and turmeric gives it a warm, citrusy depth that makes it genuinely exciting to eat โ not just good for you. Because the entire recipe is built from whole, naturally gluten-free ingredients, there's no need to scrutinize labels or worry about hidden additives sneaking into your ferment. The process is beautifully simple: salt, massage, pack, and wait. Massaging the cabbage until it releases its own brine is the key step that makes everything work, creating a natural liquid environment where fermentation can do its thing over three to five days. Once it hits that perfect balance of tangy and tender with a slight crunch, it's ready to pile onto grain bowls, eggs, tacos, or anything else that could use a punchy, probiotic-rich kick. Make one batch and you'll understand why people keep a jar of this going in the fridge at all times.

Quarter the cabbage through the core, then cut out and discard the core. Slice each quarter crosswise into thin shreds about 1/8-inch thick. Reserve one of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8โ10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet โ the brine should pool visibly at the bottom of the bowl.
