Tangy, bright, and packed with bold aromatics, this fermented cabbage is a far cry from the plain jarred stuff sitting on grocery store shelves. Sliced garlic, fresh orange zest, grated ginger, and a touch of turmeric transform a humble head of green cabbage into something genuinely exciting โ golden-hued and layered with citrusy warmth. The whole process is completely plant-based and relies on nothing more than salt, vegetables, and time, so there's no need to scrutinize labels for hidden animal-derived thickeners or setting agents. Massaging the cabbage with sea salt draws out its natural juices to create the brine, meaning the fermentation is entirely self-sustaining โ no additives, no shortcuts. Within a few days at room temperature, those small bubbles signal that live cultures are doing their thing, building that signature tang you want in a great kraut. It's endlessly versatile as a condiment โ pile it onto grain bowls, tuck it into sandwiches, or serve it alongside roasted meats for a punchy contrast. Once you've made your own batch, it's hard to go back.

Quarter the cabbage through the core, then cut out and discard the core. Slice each quarter crosswise into thin shreds about 1/8-inch thick. Reserve one of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8โ10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet โ the brine should pool visibly at the bottom of the bowl.
