Tangy, golden, and fragrant with citrus and warm spice, this homemade fermented cabbage is anything but ordinary. The combination of fresh orange zest, sliced garlic, grated ginger, and turmeric transforms a humble head of green cabbage into something genuinely exciting โ bright and complex with every forkful. Store-bought versions often sneak in unexpected additives or seasonings, so making your own from scratch means you know exactly what's in the jar. The process is beautifully simple: salt, massage, pack, and wait. Massaging the cabbage by hand draws out its natural liquid to create the brine, so no vinegar or special equipment is needed โ just time and a mason jar. By day three, you'll start to see bubbles and smell that satisfying tang that tells you fermentation is doing its thing. The finished kraut is a punchy, probiotic-rich condiment that's incredible piled onto grain bowls, tucked into sandwiches, or eaten straight from the jar.

Quarter the cabbage through the core, then cut out and discard the core. Slice each quarter crosswise into thin shreds about 1/8-inch thick. Reserve one of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8โ10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet โ the brine should pool visibly at the bottom of the bowl.
