Fermented foods can feel intimidating to make at home, but this bright, aromatic kraut is genuinely approachable โ just cabbage, salt, and a handful of fresh aromatics doing their thing over a few days on your counter. The combination of orange zest, garlic, ginger, and turmeric gives it a flavor that's miles away from the plain jarred stuff, with a warmth and citrusy lift that makes it easy to pile onto just about anything. Because you're making it yourself from scratch, you know exactly what's going into every bite โ no preservatives, no additives, just real fermented goodness that supports a nourishing postpartum diet. The live cultures that develop naturally during fermentation are a genuine bonus when you're focused on eating well while nursing. Massaging the cabbage by hand and packing it tightly into the jar is oddly satisfying, and watching the bubbles form over the first couple of days makes the whole process feel a little magical. It keeps beautifully in the fridge and gets even more complex in flavor as the days go on, so a single batch goes a long way as a tangy, gut-friendly condiment.

Quarter the cabbage through the core, then cut out and discard the core. Slice each quarter crosswise into thin shreds about 1/8-inch thick. Reserve one of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8โ10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet โ the brine should pool visibly at the bottom of the bowl.
