Tangy, golden, and fragrant with citrus and warm spice, this fermented cabbage is a serious upgrade from anything you'd find in a store-bought jar. The combination of fresh orange zest, sliced garlic, grated ginger, and turmeric transforms a humble head of green cabbage into something genuinely exciting โ bright and complex with every forkful. The whole process is driven by salt and time, relying entirely on the cabbage's own natural brine to create that signature sour depth. Because the ingredient list is so clean and straightforward, there's no need to scrutinize labels or worry about hidden additives or cross-contact from shared processing facilities. Massaging the cabbage until it releases its liquid is the key step โ it takes about ten minutes of real effort, but that's what builds the brine that keeps everything safely submerged during fermentation. By day three you'll start seeing bubbles and catching that pleasantly sour aroma, and by day five you'll have a jar of probiotic-rich sauerkraut that's tangy, a little spicy, and faintly sweet from the orange. It's fantastic alongside grilled proteins, tucked into grain bowls, or eaten straight from the jar with a fork.

Quarter the cabbage through the core, then cut out and discard the core. Slice each quarter crosswise into thin shreds about 1/8-inch thick. Reserve one of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8โ10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet โ the brine should pool visibly at the bottom of the bowl.
