Bright with fresh orange zest, warming ginger, and golden turmeric, this fermented kraut is anything but ordinary. The autoimmune protocol can make condiments and fermented foods tricky to source — most store-bought versions sneak in vinegar, sugar, or spices that fall outside the guidelines — but this one is built entirely from compliant ingredients with nothing to second-guess. The real magic happens through lacto-fermentation: just cabbage, non-iodized sea salt, and a handful of aromatics transform over three to five days into a tangy, probiotic-rich condiment that supports gut health, which is often a central focus of this way of eating. Massaging the cabbage until it releases its own brine is the key step, and watching those bubbles appear within the first couple of days is genuinely satisfying. The orange zest lifts the whole jar with a subtle citrus brightness that plays beautifully against the garlic and turmeric. It makes eight servings, so you'll have plenty to pile onto proteins, stir into bowls, or eat straight from the jar with a fork — no judgment.

Quarter the cabbage through the core, then cut out and discard the core. Slice each quarter crosswise into thin shreds about 1/8-inch thick. Reserve one of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8–10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet — the brine should pool visibly at the bottom of the bowl.
