Dried black pepper can sometimes contain mold toxins, but the trace amount used here is so small that it is likely tolerated by many. Heat the olive oil in a large (12-inch) skillet over medium heat until shimmering. Add the sliced onions and salt, and stir to coat evenly in the oil.
Cook the onions, stirring every 3–4 minutes, for 15 minutes, until they have wilted and released most of their moisture and are beginning to turn translucent.
