Some syrups contain refined sugars processed with bone char. Choose organic or maple syrup to be safe.




Combine the berries, sugar, and water in a small saucepan over medium heat. Stir until the sugar dissolves, then gently press the berries with the back of a spoon to release their juice. Cook until the mixture is slightly thickened and the berries have broken down, about 5β7 minutes.
Pour the berry mixture through a fine-mesh strainer into a small bowl or jar, pressing the solids firmly to extract as much syrup as possible. Discard the solids. Let the syrup cool to room temperature, about 10 minutes.
