Rich, deeply savory, and built entirely from beef bones and aromatics, this broth is the kind of thing that makes your whole kitchen smell incredible for hours. Roasting the bones first at high heat develops that gorgeous dark color and caramelized depth before a single drop of water hits the pot ā it's a step that makes a real difference. Dried shiitake mushrooms bring an earthy, umami-forward layer that sets this broth apart from anything you'd find in a standard carton at the store. Fresh thyme, rosemary, and parsley alongside turmeric and ginger give it a warmth and complexity that feels almost medicinal in the best possible way. The long, slow simmer ā anywhere from ten to twelve hours ā is what coaxes all that collagen and flavor out of the bones, resulting in a broth that turns silky and gelatinous once chilled. It's completely free of poultry in any form, so there's no need to scrutinize labels or worry about blended stock products that sneak in turkey or chicken. Use it as a base for soups and braises, sip it straight from a mug, or freeze it in portions so you always have something genuinely good on hand.

Preheat the oven to 425°F (220°C). Arrange the beef bones in a single layer in a large roasting pan and roast for 30ā35 minutes, until deeply browned on the surface.
Transfer the roasted bones to a 12-quart (or larger) stockpot. Pour off and discard any excess fat from the roasting pan, then add 1 cup of the cold water to the pan and scrape up the browned bits with a wooden spoon. Pour this liquid into the stockpot.
