Rich, deeply savory, and built on a foundation of slow-simmered beef bones, this broth is the kind of thing that makes your whole kitchen smell incredible for hours. Roasting the bones first at high heat develops a gorgeous caramelized depth before they ever hit the pot, and dried shiitake mushrooms layer in an earthy, umami richness that sets this apart from any store-bought carton. Fresh herbs, ginger, turmeric, and a splash of apple cider vinegar round out the flavor and help draw collagen and minerals from the bones over that long, gentle simmer. Every single ingredient here is straightforward and naturally free from tree nuts of any kind, so there's no label-scanning or cross-contamination anxiety to deal with ā just clean, wholesome cooking. The finished broth is a stunning amber color, silky from the collagen, and endlessly versatile as a sipping broth, soup base, or braising liquid. It stores beautifully in the fridge once you skim the fat cap, and it freezes well too, so a single big batch goes a long way.
