Rich, deeply savory, and built on nothing but whole ingredients, this bone broth is the kind of project that rewards patience in the most satisfying way. Roasting the beef bones first coaxes out a deep, caramelized flavor that forms the backbone of the entire batch, while dried shiitake mushrooms layer in an earthy, umami depth you just can't get from a store-bought carton. Apple cider vinegar helps draw minerals from the bones during the long simmer, and fresh thyme, rosemary, ginger, and turmeric round everything out with warmth and complexity. The 10ā12 hour simmer sounds like a commitment, but most of that time is completely hands-off ā just a quiet pot doing its thing on the lowest burner. Every single ingredient here is naturally free of sweeteners, so there's no label-reading anxiety or hidden additives to worry about. What you end up with is a glossy, amber broth that's genuinely nourishing and endlessly versatile ā sip it straight from a mug, use it as a base for soups and stews, or freeze it in portions to have on hand whenever you need it.

Preheat the oven to 425°F (220°C). Arrange the beef bones in a single layer in a large roasting pan and roast for 30ā35 minutes, until deeply browned on the surface.
Transfer the roasted bones to a 12-quart (or larger) stockpot. Pour off and discard any excess fat from the roasting pan, then add 1 cup of the cold water to the pan and scrape up the browned bits with a wooden spoon. Pour this liquid into the stockpot.
