Rich, deeply savory, and built on a long, slow simmer, this mushroom beef bone broth is the kind of thing that makes your whole kitchen smell incredible for hours. Roasting the bones first coaxes out a gorgeous depth of flavor before they ever hit the pot, and the dried shiitake mushrooms add an earthy, umami backbone that sets this broth apart from anything you'd find in a carton at the store. Many packaged broths and seasoning blends sneak in warming spices that can be a real problem for anyone avoiding cinnamon, but every single ingredient here is straightforward and easy to verify. The aromatics ā fresh thyme, rosemary, parsley, bay leaves, turmeric, and ginger ā deliver plenty of complexity without crossing into spice territory that causes concern. Apple cider vinegar helps draw collagen and minerals out of the bones over the long cook, so the finished broth is silky, nourishing, and genuinely satisfying on its own or as a base for soups, stews, and sauces. Once chilled, it keeps beautifully in the fridge or freezer, ready to pull out whenever you need a clean, flavorful liquid that you know exactly what went into.

Transfer the roasted bones to a 12-quart (or larger) stockpot. Pour off and discard any excess fat from the roasting pan, then add 1 cup of the cold water to the pan and scrape up the browned bits with a wooden spoon. Pour this liquid into the stockpot.
