Rich, deeply savory, and built entirely from whole ingredients, this bone broth is the kind of thing that makes your kitchen smell incredible for hours. BHA and BHT are synthetic preservatives found in a surprising number of packaged broths and stocks, so making your own from scratch is one of the cleanest ways to sidestep them entirely. The process starts with oven-roasted beef bones that develop a gorgeous, caramelized crust before ever hitting the pot ā that browning is what gives the finished broth its deep amber color and complex, meaty backbone. Dried shiitake mushrooms add an earthy umami depth that takes this well beyond a basic stock, while fresh thyme, rosemary, parsley, and bay leaves layer in herbal brightness. A splash of apple cider vinegar helps draw minerals from the bones during the long simmer, and turmeric and ginger round things out with a subtle warmth. After 10 to 12 hours of low, patient simmering, you're left with something silky, nourishing, and completely free of anything you didn't put in yourself. Use it as a sipping broth, a base for soups and stews, or anywhere a store-bought carton would have let you down.

Preheat the oven to 425°F (220°C). Arrange the beef bones in a single layer in a large roasting pan and roast for 30ā35 minutes, until deeply browned on the surface.
Transfer the roasted bones to a 12-quart (or larger) stockpot. Pour off and discard any excess fat from the roasting pan, then add 1 cup of the cold water to the pan and scrape up the browned bits with a wooden spoon. Pour this liquid into the stockpot.
