Rich, deeply savory, and built entirely from whole ingredients, this bone broth is the kind of thing that makes your kitchen smell incredible for hours. Roasting the beef bones first coaxes out a deep, caramelized flavor that no store-bought carton can replicate ā and without any of the flavor enhancers or additives those products often rely on. Dried shiitake mushrooms bring an earthy umami depth, while fresh thyme, rosemary, and parsley layer in herbal complexity that feels genuinely homemade. A splash of apple cider vinegar helps draw minerals from the bones during the long simmer, and turmeric with fresh ginger add a subtle warmth that rounds everything out beautifully. The 10ā12 hour simmer is mostly hands-off, and the result is a glossy, amber broth that gels when chilled ā a sign you've done everything right. Use it as a sipping broth, a base for soups and stews, or anywhere you want to add serious depth without reaching for anything artificial.

Preheat the oven to 425°F (220°C). Arrange the beef bones in a single layer in a large roasting pan and roast for 30ā35 minutes, until deeply browned on the surface.
Transfer the roasted bones to a 12-quart (or larger) stockpot. Pour off and discard any excess fat from the roasting pan, then add 1 cup of the cold water to the pan and scrape up the browned bits with a wooden spoon. Pour this liquid into the stockpot.
