Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Score the cut side of each eggplant half in a crosshatch pattern, cutting about 3/4 inch deep but not through the skin. Brush the cut sides with 2 tbsp olive oil and season with the sea salt. Place cut-side down on the prepared baking sheet and roast for 25 minutes, until the flesh is completely tender when pierced with a knife and the skin has begun to collapse.
