Ingredients

2 servings

For the tea base

1 ½ cups water
2 green tea bags
TEA CO Benner GREEN TEA Pampa Green Tea
See all
½ cup fresh mint leaves, loosely packed
2 tbsp maple syrup
2 tbsp fresh lime juice (from about 1 lime)
1 tsp lime zest

For the steamed milk

1 cup milk
Chef's tip
Use plain, unsweetened soy milk, measured 1:1. It's one of the most reliable milk swaps and works in sauces, custards, and baked goods. For hot or acidic drinks, a barista-style soy milk resists curdling.

For serving

1 pinch ground cinnamon, for serving (optional)
2 fresh mint sprigs, for serving (optional)

Instructions

1
Bring the water to a boil in a small saucepan over high heat, then remove from the heat. Add the green tea bags and fresh mint leaves and steep for 4 minutes, until the liquid is deep green and fragrant.
2
Remove and discard the tea bags. Strain the mint tea through a fine-mesh strainer into a heatproof measuring cup or bowl, pressing the mint leaves gently to extract all the liquid; discard the spent leaves.
