Few cocktails are as achingly refreshing as this Southern classic, and this version keeps things beautifully simple with a homemade granulated sugar syrup instead of any sweetener that could complicate things for those avoiding bee-derived ingredients. The syrup comes together in just a few minutes on the stovetop and can be made well ahead of time, so you're always ready to pour. Fresh mint leaves are muddled gently β just enough to release their fragrance without turning bitter β and that restraint is what separates a great julep from a grassy, over-worked one. Crushed ice packed high into a chilled cup creates that signature frosty exterior and keeps every sip ice-cold from first to last. A generous pour of bourbon ties it all together with warmth and depth that plays beautifully against the cool mint. The optional dusting of powdered sugar on the mint garnish is a small, elegant touch that makes the whole glass look like it belongs on a Kentucky Derby table. Whether you're hosting a crowd or treating yourself on a warm afternoon, this is the kind of drink that feels like a genuine occasion.

Place the mint leaves in the bottom of a chilled julep cup or rocks glass. Add the simple syrup and muddle gently β press and twist the muddler 3β4 times just until the leaves are bruised and fragrant. Do not shred the leaves.
