Few cocktails are as achingly refreshing as a properly made mint julep, and this one is built entirely from scratch with clean, simple ingredients. Carrageenan β a thickener and stabilizer derived from seaweed β sneaks into a surprising number of store-bought syrups, flavored spirits, and pre-made cocktail mixers, so making your own simple syrup from just sugar and water is the smartest move you can make here. The homemade syrup comes together in minutes and keeps in the fridge for up to two weeks, so you can batch it ahead and be ready whenever the mood strikes. Fresh mint leaves are muddled gently β just enough to release their fragrance without turning bitter β then layered with crushed ice and good bourbon for that signature frosty, aromatic finish. The technique of stirring until the outside of the cup frosts over isn't just for show; it chills the drink to the perfect temperature and gives every sip that cool, silky quality that makes this cocktail legendary. A dusting of powdered sugar on the mint garnish is optional but adds a beautiful, old-fashioned touch that makes the whole presentation feel special.

Place the mint leaves in the bottom of a chilled julep cup or rocks glass. Add the simple syrup and muddle gently β press and twist the muddler 3β4 times just until the leaves are bruised and fragrant. Do not shred the leaves.
