Preheat the oven to 400°F (205°C). Line a large baking sheet with parchment paper.
Heat 1 tbsp of the olive oil in a large skillet over medium heat until shimmering. Add the scallion greens and cook, stirring, until softened, about 2 minutes. Add the garlic and cook, stirring constantly, until fragrant, about 1 minute — watch closely so it doesn't brown.
