Eggs are safe during pregnancy as long as they are cooked all the way through.








Oregano is fine during pregnancy in normal cooking amounts - this recipe uses about 1/4 tsp per serving. The caution is about concentrated oregano oil and large medicinal doses.


Preheat the oven to 375°F (190°C). In a large mixing bowl, whisk together the eggs, dried oregano, salt, and black pepper until the yolks and whites are fully combined and the mixture is uniform in color, about 30 seconds. Set aside.
Heat 2 tbsp of the olive oil in a 10-inch oven-safe skillet over medium-high heat until shimmering. Add the zucchini and red bell pepper and cook, stirring occasionally, until the vegetables are softened and lightly golden at the edges, about 6–7 minutes.
