Sweet summer peaches and juicy cherry tomatoes might sound like an unlikely pairing, but together they create something genuinely special ā bright, refreshing, and just a little unexpected. Crisp cucumber, briny Castelvetrano olives, and a shower of fresh mint and basil round out the bowl with layers of flavor that feel effortlessly Mediterranean. The dressing is where things get interesting: a quick whisk of olive oil, lemon juice, honey, cumin, and turmeric gives the whole salad a warm, golden depth that goes way beyond a basic vinaigrette. Letting the red onion sit in the dressing for ten minutes before everything else goes in is a small step that makes a big difference, softening that sharp bite into something mellow and almost sweet. Every ingredient here is naturally free from tree nut concerns ā no hidden nut oils, no ambiguous "mixed nut" add-ins ā so you can toss it together with total confidence. The optional pistachios on top add a satisfying crunch if your household can enjoy them, but the salad holds its own beautifully without them. This one is ideal for a warm-weather lunch, a cookout side, or honestly just eating straight from the bowl before it even makes it to the table.
