Preheat the oven to 425°F (220°C). Arrange the bell pepper strips in a single layer on a large baking sheet, drizzle with 2 tbsp of the olive oil, and sprinkle with the salt. Toss to coat, then spread back into a single layer.
Roast the peppers for 20–22 minutes, turning once halfway through, until the edges are lightly charred and the strips are tender and beginning to collapse.
