Pat the cod fillets thoroughly dry with paper towels, then season both sides with 1/2 tsp of the salt and 1/4 tsp of the pepper.
Heat 2 tbsp of the garlic-infused olive oil in a 12-inch skillet over medium-high heat until shimmering. Add the cod fillets and sear undisturbed for 3–4 minutes, until the underside is golden and releases cleanly from the pan. Flip and sear for 2 minutes more, then transfer to a plate — the fish will finish cooking in the sauce.
