Bright, herby, and loaded with fresh vegetables, this grain-based salad is the kind of meal that feels indulgent without working against your wellness goals. Long-grain brown rice serves as the hearty foundation — a whole grain that fits comfortably within candida-conscious eating, unlike refined white rice or starchy fillers that can spike blood sugar and feed unwanted yeast. The lemon-oregano dressing is made entirely from scratch with extra virgin olive oil, fresh lemon juice, and a touch of cumin, so there's no need to scrutinize store-bought dressings for hidden sugars, vinegars, or additives that could derail your progress. Kalamata olives bring a satisfying briny depth, while crisp cucumber and cherry tomatoes keep every bite feeling clean and vibrant. Fresh parsley and optional mint add a pop of color and a layer of herbal brightness that makes this salad taste far more complex than the ingredient list suggests. It holds up beautifully in the fridge for a few days, making it an ideal prep-ahead lunch when you need something reliable and on-plan ready to go.

FIELD DAY OLIVE OIL EXTRA VIRGIN

Combine the brown rice, water, and 1/4 tsp salt in a medium saucepan. Bring to a boil over high heat, then reduce the heat to low, cover tightly, and cook until the water is fully absorbed and the rice is tender, about 40–45 minutes.
Remove the saucepan from the heat and let the rice rest, covered, for 10 minutes, then spread it out in a large mixing bowl and let it cool to room temperature, about 15 minutes.
