Using clean hands, massage the kale firmly for 2–3 minutes, squeezing and working the leaves until they are noticeably darker, reduced in volume by about half, and tender when you bite a piece.
In a small bowl, whisk together the tahini, lemon juice, lemon zest, 2 tbsp extra virgin olive oil, grated garlic, honey, and turmeric until smooth.
