Place the sliced kale in a large mixing bowl. Sprinkle with ¼ tsp fine sea salt and drizzle with 1 tbsp extra virgin olive oil. Using clean hands, massage the kale firmly for 2–3 minutes, squeezing and working the leaves until they are noticeably darker, reduced in volume by about half, and tender when you bite a piece.
In a small bowl, whisk together the tahini, lemon juice, lemon zest, 2 tbsp extra virgin olive oil, grated garlic, honey, and turmeric until smooth. Add water 1 tbsp at a time, whisking after each addition, until the dressing is pourable and coats the back of a spoon — about the consistency of a thin yogurt. Season with salt and pepper to taste.
