Raw kale can be a tough sell — literally — but massaging the leaves with olive oil and sea salt transforms them into something silky, deeply savory, and genuinely craveable. The process only takes a few minutes of hands-on work, and the payoff is a tender, flavorful base that holds up beautifully under a bold dressing. Speaking of the dressing: tahini, fresh lemon juice and zest, grated garlic, raw honey, and a pinch of ground turmeric come together into something creamy, bright, and a little earthy all at once. Turmeric and extra virgin olive oil are both well-regarded for their role in an inflammation-conscious diet, and here they pull double duty as flavor powerhouses. Halved cherry tomatoes and diced cucumber add freshness and crunch, while toasted pumpkin seeds bring a nutty, satisfying finish that makes this feel like a complete meal rather than a side dish. Everything is whole-food and straightforward — no processed ingredients to second-guess, just clean produce and pantry staples working in harmony. This recipe serves four, making it an easy weeknight option or a crowd-pleasing addition to a weekend spread.

FIELD DAY OLIVE OIL EXTRA VIRGIN

Added sugar is limited on an anti-inflammatory diet. This recipe contains about 1.8 g of added sugar per serving, which is likely acceptable for many following the diet. If you prefer to always avoid honey, please tap it and change its rating to Red.

Place the sliced kale in a large mixing bowl. Sprinkle with ¼ tsp fine sea salt and drizzle with 1 tbsp extra virgin olive oil. Using clean hands, massage the kale firmly for 2–3 minutes, squeezing and working the leaves until they are noticeably darker, reduced in volume by about half, and tender when you bite a piece.
In a small bowl, whisk together the tahini, lemon juice, lemon zest, 2 tbsp extra virgin olive oil, grated garlic, honey, and turmeric until smooth. Add water 1 tbsp at a time, whisking after each addition, until the dressing is pourable and coats the back of a spoon — about the consistency of a thin yogurt. Season with salt and pepper to taste.
