Autumn flavors don't get much more inviting than this — a dramatic, puffed oven pancake loaded with real pumpkin purée, fresh grated ginger, and warm Ceylon cinnamon, all finished with a drizzle of pure maple syrup. The batter comes together in a blender in under a minute, then a screaming-hot cast iron skillet does the heavy lifting, coaxing those gorgeous golden edges up the sides of the pan. Every single ingredient here is naturally free of soy — no hidden soy lecithin in the butter, no soy-based syrups, no processed shortcuts that sneak it in through the back door. That's the kind of clean, straightforward ingredient list that makes weekend brunch feel genuinely relaxed. The pancake puffs up impressively in the oven and then settles into a tender, custardy center once you pull it out — which is exactly what you want before slicing it into wedges right from the skillet. A little extra fresh ginger on top adds a bright, slightly spicy finish that plays beautifully against the sweetness of the maple. This is the kind of showstopper that looks like you worked much harder than you actually did.

Place a 10-inch or 12-inch oven-safe skillet (cast iron preferred) on the center rack of the oven and preheat to 425°F (220°C). Allow the skillet to heat for the full preheat time, at least 15 minutes.
In a blender (or in a large bowl using a whisk), combine the eggs, milk, pumpkin purée, 2 tbsp maple syrup, grated ginger, Ceylon cinnamon, and salt. Blend or whisk until completely smooth, about 30 seconds in a blender or 1 minute by hand. Add the flour and blend or whisk just until no dry streaks remain and the batter is smooth and pourable — it will be thinner than standard pancake batter.
