Imagine a golden, dramatically puffed pancake emerging from the oven with caramelized edges and the warm scent of ginger and cinnamon filling the kitchen — this skillet bake is weekend breakfast at its most impressive. The batter comes together in minutes with eggs, whole milk, pumpkin purée, and a touch of pure maple syrup, then gets poured into a screaming-hot buttered cast iron pan that does all the heavy lifting. That high-heat technique is what creates those gorgeous, crispy-edged walls and a tender, custardy center that sets perfectly in under 25 minutes. Managing histamine levels often means steering clear of fermented, aged, or processed ingredients, and every component here is fresh and straightforward — no vinegar, no canned sauces, no mystery additives. Fresh ginger and Ceylon cinnamon bring real warmth and complexity without relying on anything that could trigger a reaction, and the maple syrup keeps sweetness clean and natural. A final drizzle of syrup and optional sliced ginger on top make it feel genuinely special. Serve it straight from the skillet in wedges while it's still warm — it feeds four and disappears fast.

Place a 10-inch or 12-inch oven-safe skillet (cast iron preferred) on the center rack of the oven and preheat to 425°F (220°C). Allow the skillet to heat for the full preheat time, at least 15 minutes.
In a blender (or in a large bowl using a whisk), combine the eggs, milk, pumpkin purée, 2 tbsp maple syrup, grated ginger, Ceylon cinnamon, and salt. Blend or whisk until completely smooth, about 30 seconds in a blender or 1 minute by hand. Add the flour and blend or whisk just until no dry streaks remain and the batter is smooth and pourable — it will be thinner than standard pancake batter.
